Low sugar. Almond-flour based. Sweetened with monkfruit. All the flavors from your eleven infographics.
Introduction
Your eleven infographics cover six families of carrot desserts: layer cakes (two sheets), cupcakes, cinnamon rolls, roll cakes and Swiss rolls (two sheets), air fryer treats, and carrot fudge (four sheets). That is over 100 flavor ideas, and most of the originals are made with white sugar, brown sugar, sweetened condensed milk or white chocolate chips, which are a poor fit for diabetes.
Instead of 100 separate recipes, this document gives one diabetic-friendly master recipe per family, followed by every flavor from the infographics as a short list of swaps. Duplicates are merged (for example, Salted Caramel, Peanut Butter and Maple Walnut appear in several sheets) and numbering glitches in the images are ignored. The result is a complete set you can mix and match.
How the Recipes Are Adapted
| Original ingredient | Diabetic-friendly swap |
|---|---|
| White or brown sugar | Granular monkfruit-erythritol blend (1:1 measure); powdered version for frosting |
| All-purpose flour | Almond flour, with a little coconut flour or whole wheat pastry flour |
| Sweetened condensed milk | Sugar-free sweetened condensed milk (store-bought low-carb, or homemade below) |
| Chocolate and white chocolate chips | Sugar-free chips or 85% dark chocolate |
| Maple syrup, caramel, honey | Sugar-free maple or caramel syrup, used in small amounts |
| Sprinkles, cookies, candy | Sugar-free versions, or nuts and freeze-dried fruit |
Homemade sugar-free condensed milk: Simmer 1 cup heavy cream, ⅓ cup powdered monkfruit-erythritol and 2 tbsp butter over low heat for 20 minutes, stirring, until thick. It makes about ¾ cup.
Carrots and blood glucose: One cup of shredded raw carrot has about 12 g carbs and 3 g fiber. Carrots are a vegetable with a modest glycemic load when baked into a high-fat, high-protein batter, so the carrot is not the problem; the sugar and white flour are.
Core Diabetes Rules for All Recipes
- Serve one portion (a slice, one cupcake, one roll, one fudge square) after a balanced meal.
- Pair with protein or fiber, such as plain Greek yogurt or a handful of nuts.
- Check your glucose 1 to 2 hours after trying a new recipe.
- Sugar alcohols (erythritol) can cause stomach upset in large amounts.
- All values are estimates, since sweeteners and chips differ by brand.
1. Carrot Cake (Master Recipe, 16 slices)
Ingredients
- 2 cups almond flour
- ¼ cup coconut flour
- 1 cup granular monkfruit-erythritol blend
- 2 tsp baking powder, ½ tsp baking soda, ½ tsp salt
- 2 tsp cinnamon, ½ tsp nutmeg, ½ tsp ginger
- 4 large eggs
- ½ cup melted butter or avocado oil
- ¼ cup unsweetened almond milk
- 1 tsp vanilla extract
- 1½ cups shredded carrots (about 3 medium)
- ½ cup chopped walnuts or pecans
Frosting: 8 oz softened cream cheese, 4 tbsp butter, ½ cup powdered monkfruit-erythritol, 1 tsp vanilla.
Preparation
- Heat the oven to 175°C (350°F). Grease and line a 9-inch round pan (or two 8-inch pans for layers).
- Whisk the dry ingredients. In another bowl beat the eggs, butter, milk and vanilla, then combine.
- Fold in the carrots and nuts. Pour into the pan.
- Bake 35 to 40 minutes (25 to 30 for two layers) until a toothpick comes out clean. Cool completely.
- Beat the frosting until fluffy and spread it over the cooled cake.
Why it helps with diabetes: Almond flour replaces refined flour, so the slice is much lower in carbs, and the eggs, nuts and cream cheese add protein and fat that slow glucose absorption.
Nutrition (per slice with frosting): about 230 kcal, 8 g carbs (5 g net), 20 g fat, 6 g protein, 3 g fiber.
Carrot Cake Flavors (from your two cake sheets)
- Classic Double Carrot: Master recipe, layered, with extra shredded carrot on top.
- Classic Carrot Cheesecake: Press half the batter in the pan, then top with a cheesecake layer (16 oz cream cheese, 2 eggs, ½ cup monkfruit, vanilla) and bake at 160°C (325°F) for 45 minutes.
- Caramel Pecan: Add ¼ cup pecans; top with sugar-free caramel and pecans.
- Lime Avocado: Replace the frosting with mashed avocado, lime zest and juice, and a little powdered sweetener; fold unsweetened shredded coconut into the batter.
- Spicy Cinnamon: Double the cinnamon and nutmeg, add ½ tsp ginger; dust with cinnamon.
- Chocolate Carrot: Add ¼ cup unsweetened cocoa powder and ¼ cup sugar-free chocolate chips; top with sugar-free chocolate drizzle.
- Pineapple Coconut: Add 2 tbsp well-drained crushed pineapple and ½ cup unsweetened coconut flakes. Pineapple adds sugar, so keep it small.
- Orange Citrus: Add 1 tbsp orange zest and 3 tbsp plain Greek yogurt; frost with orange zest cream cheese.
- Maple Walnut: Use sugar-free maple syrup (1 tbsp) and ½ cup walnuts.
- Vanilla Bean: Add seeds from 1 vanilla bean to batter and frosting.
- Vegan Carrot: Use flax eggs (4 tbsp ground flax plus 12 tbsp water), almond milk and coconut oil.
- Croustillant (crunchy): Top with crisp toasted almond slivers and a thin sugar-free caramel.
- Bacon Caramel: Top with 2 strips crumbled crisp bacon and sugar-free caramel.
- Raclette: Top the baked, unfrosted cake with a layer of melted raclette or Gruyère cheese under the broiler for a savory-sweet slice.
- Honey Walnut: Use 2 tsp honey total on the frosting, or sugar-free syrup, and toasted walnuts.

- Alpine: Add 1 tsp fresh rosemary; dust with powdered sweetener.
- Mexican Chocolate: Add 2 tbsp cocoa, ½ tsp cinnamon and a pinch of cayenne; drizzle with sugar-free chocolate.
2. Carrot Cake Cupcakes (makes 12)
Use the master cake batter at 70% (about ¾ of every quantity listed, with 3 eggs). Fill 12 liners and bake at 175°C (350°F) for 18 to 22 minutes. Frost with cream cheese frosting.
Nutrition (per frosted cupcake): about 190 kcal, 6 g carbs (4 g net), 17 g fat, 5 g protein.
Why it helps with diabetes: A single cupcake is a built-in portion, and the nuts and almond flour keep the carbs low.
Autumn flavors from your sheet:

- Caramel Apple: Add ¼ cup finely diced apple; drizzle with sugar-free caramel.
- Maple Pecan: Sugar-free maple syrup, chopped pecans on top.
- Chocolate: Add 2 tbsp cocoa and dark chocolate chunks; use a chocolate cream cheese frosting.
- Gingerbread: Add 1 tsp ground ginger and 1 tsp sugar-free molasses flavor.

- Chai Spice: Add 1 tsp chai spice blend and ¼ tsp cardamom.
- Butter Pecan: Add ½ tsp butter pecan extract and chopped pecans.
- Salted Caramel: Sugar-free caramel in the frosting and a pinch of sea salt.
- Peanut Butter: Mix 2 tbsp natural peanut butter into the frosting; top with crushed peanuts.
3. Carrot Cinnamon Rolls (makes 8)
A classic yeast dough is high in carbs, so this version uses a quick, low-carb dough.
Dough
- 1½ cups shredded part-skim mozzarella
- 2 oz (¼ cup) cream cheese
- 1 cup almond flour
- ¼ cup coconut flour
- 1 egg
- 1 tsp baking powder
- ½ cup finely shredded carrots, squeezed dry
Filling: 3 tbsp softened butter, 3 tbsp granular monkfruit-erythritol, 2 tsp cinnamon.
Glaze: 2 oz cream cheese, 2 tbsp powdered monkfruit-erythritol, 1 tbsp almond milk, ½ tsp vanilla.
Preparation
- Melt mozzarella and cream cheese together in the microwave for 60 seconds, stir, then mix in the egg, flours, baking powder and carrots until a dough forms.
- Roll between two sheets of baking paper into a 10 x 14 inch rectangle.
- Spread the butter, sprinkle sweetener and cinnamon, roll up tightly from the long side, and cut into 8 rolls.
- Bake at 175°C (350°F) for 18 to 22 minutes until golden. Cool 5 minutes and glaze.
Nutrition (per roll): about 210 kcal, 8 g carbs (5 g net), 17 g fat, 9 g protein.
Why it helps with diabetes: The cheese-and-almond dough has roughly a third of the carbs of regular dough, and more protein.
Flavors from your sheet:
- Classic Vanilla Carrot: Add 1 tsp vanilla to the glaze.
- Apple Pie: Add ¼ cup finely diced apple and a pinch of nutmeg to the filling.
- Chocolate Hazelnut: Add cocoa to the filling, with chopped hazelnuts and sugar-free chips.

- Cinnamon Brown Sugar: Use brown-sugar-style monkfruit blend and extra cinnamon.
- Maple Walnut: Sugar-free maple syrup and walnuts.
- Cream Cheese: Double the glaze.
- Vegan Coconut: Use vegan cheese, coconut oil and almond milk, and top with unsweetened coconut.

- 1 tsp vanilla
Filling: 6 oz cream cheese, 3 tbsp butter, ¼ cup powdered monkfruit-erythritol, 1 tsp vanilla.
Preparation
- Heat the oven to 175°C (350°F) and line a 10 x 15 inch jelly-roll pan with baking paper.
- Beat the egg yolks with half the sweetener until pale, then mix in vanilla, flours, carrots, cinnamon and baking powder.
- Whip the whites with a pinch of salt and the remaining sweetener to stiff peaks. Fold into the batter in two additions.
- Spread in the pan and bake 12 to 14 minutes until springy.
- Turn out onto paper dusted with powdered sweetener, peel off the lining, and roll up with the paper while warm. Cool completely.
- Unroll, spread the filling, re-roll, and chill 1 hour.
Nutrition (per slice): about 150 kcal, 5 g carbs (3 g net), 13 g fat, 5 g protein.
Why it helps with diabetes: It is mostly eggs, nuts and cream cheese, with minimal flour, so the glucose effect is gentle.

Preparation
- Roll bite dough into 12 small balls, or cut twist dough into 12 strips and twist.
- Air fry at 175°C (350°F) for 8 to 10 minutes (twists 10 to 12), shaking or turning once.

6. Carrot Cake Fudge (makes 24 small squares)
Traditional carrot fudge uses sweetened condensed milk and 2 to 3 cups of white chocolate chips, which is a huge amount of sugar. This version keeps the creamy fudge texture with sugar-free ingredients and very small squares.
Ingredients
- 1½ cups sugar-free white chocolate chips (or sugar-free chocolate for chocolate versions)
- ¾ cup sugar-free sweetened condensed milk (see recipe above)
- 3 tbsp butter
- 1 tsp vanilla, 1 tsp cinnamon, pinch of nutmeg
- ½ cup finely shredded carrots, squeezed very dry and sauteed 3 minutes
Preparation
- Line an 8-inch pan with baking paper.
- Melt the chips, condensed milk and butter together over low heat, stirring until smooth.
- Stir in vanilla, spices and carrots.
- Spread in the pan, top with extra carrot shreds, and chill 3 hours.
- Cut into 24 small squares. Keep refrigerated.
Nutrition (per square): about 110 kcal, 4 g carbs (3 g net), 9 g fat, 2 g protein.
Why it helps with diabetes: Small squares, no added sugar, and high fat slow digestion. This is still rich, so one square is a serving.

Nutrition Comparison (per serving, estimated)
| Dessert | Serving | Kcal | Net carbs |
|---|---|---|---|
| Carrot cake | 1 slice | 230 | 5 g |
| Cupcake | 1 | 190 | 4 g |
| Cinnamon roll | 1 | 210 | 5 g |
| Roll cake | 1 slice | 150 | 3 g |
| Air fryer bite or twist | 1 piece | 90 | 2 g |
| Fudge | 1 square | 110 | 3 g |
The lightest options are air fryer bites and roll cake slices. Fudge and cake are the richest, so slice them thin.
Storage
- Cakes, cupcakes and rolls with cream cheese frosting must be refrigerated and eaten within 4 days.
- Fudge keeps 2 weeks in the fridge or 2 months in the freezer.
- Air fryer pieces are best fresh, but reheat well for 2 minutes.
- Most baked items freeze for 2 months without frosting.
Safety Notes
- Nut allergies are common: use sunflower seed flour and seed butter where needed, and label everything.
- Sugar-free chips and syrups vary in sweeteners and carbs, so read the label for sugar alcohols.
- Talk to your doctor or dietitian about carb targets, particularly if you use insulin or sulfonylureas.
- Cook eggs and any raw-egg-containing batter fully, and keep cream cheese desserts cold.
